Ingredients

  • 80 fresh cranberries about 10 per cube
  • 1½ cups apple juice about, to fill each cube halfway
  • 1 cup cranberry juice or cranberry juice cocktail, about
  • 8 small rosemary sprigs
  • 1 to 2 bottles (750 ml) champagne or prosecco chilled

Equipment

  • Large 8 square silicone ice cube tray
  • Kitchen scissors or a knife (for the rosemary)
  • Coupe or champagne glasses

Method

  1. Put about 10 cranberries in each square of the tray, so it's about halfway full.
  2. Pour apple juice into each square until it's about half full.
  3. Top each one with cranberry juice until it's almost to the top.
  4. Cut the rosemary into small sprigs and tuck one into each square, with the tip sticking out.
  5. Freeze for about 5 hours, until solid.
  6. Pop a cube into a coupe glass and slowly top it with chilled champagne.

Notes

For kids or anyone not drinking, skip the champagne and pour something without alcohol over the cube.
Overfilled a square? Pour a little into another one. That one will just be a little weaker.
Make the cubes ahead and keep them in the freezer until people show up.
Whole cranberries and rosemary can be a choking risk for little ones.
